Paolo Leo Passitivo is a bold yet smooth red wine from the sun drenched vineyards of Puglia, made using the traditional Italian appassimento method to enhance depth and richness. Produced from one hundred percent Primitivo, it shows intense aromas of ripe cherry, blackberry and dried plum, with notes of vanilla, sweet spice and a hint of cocoa.

Crafted under the sun drenched skies of Puglia, Paolo Leo Passitivo is a bold and expressive red wine that captures the warmth and intensity of southern Italy. Produced using the traditional Italian appassimento method, grapes are left to partially dry on the vine, naturally concentrating sugars and flavours and giving the wine its signature depth, richness and smooth texture.
Made from one hundred percent Primitivo, the wine pours a deep ruby red and opens with intense aromas of ripe cherries, blackberries and dried plums. These are layered with elegant notes of vanilla, sweet spice and a subtle hint of cocoa. On the palate, it is full bodied and velvety, with soft tannins and a warm, lingering finish that delivers both power and balance.
Despite its generous fruit profile, Paolo Leo Passitivo is classified as dry, offering a refined harmony between ripeness and structure. Its smooth and approachable style makes it an excellent match for grilled meats, pasta dishes with tomato based sauces, aged cheeses and hearty Mediterranean cuisine.
